
The first time I tried a recipe for vegan mackerel in tomato was @gronnmatportal's and now I have made my own version. A childhood favourite. I used to eat mackerel in tomato and drink chocolate milk for supper, but now I can have it vegan!
Ingredients
- 1 can sun-dried tomatoes in oil
- 1 ½ dl tomato puree
- 2 tbsp apple cider vinegar
- 1 tbsp sugar
- 2 x nori
- 1 tsp salt
- ½ tsp black pepper
- 1 can kidney beans
- 1 can jackfruit
Method
- Drain the liquid and rinse the jackfruit in a strainer. Tear into pieces and remove the hard parts and lumps.
- Put sun-dried tomatoes with oil, tomato paste, apple cider vinegar, sugar, crushed nori sheets, salt and pepper in a blender. Blend everything together.
- Put in kidney beans for protein and blend it in.
- Put the mixture in a bowl and finally add jackfruit for consistency. Fold it in with a spatula.
- Spread the spread on slices of bread and put on vegan mayonnaise. I recommend serving another glass of chocolate milk. Made with soya milk and oboy.
