
Ingredients
- 100 g lamb's lettuce
- 1 x cucumber
- 4 tbsp olive oil
- 1 x yellow onion
- 1 tsp turmeric
- 1 clove garlic
- ½ tsp cumin
- 1 tsp red pepper powder
- ½ tsp chili flakes
- 1 pinch black pepper
- 2 tbsp pistachios
- 1 tbsp pine nuts
- ½ tsp dried dill
- ½ tsp dried mint
- 2 tbsp parsley
- 1 pinch salt
- 5 tbsp plain yogurt
- 2 tbsp pomegranate seeds
Method
- Rinse field lettuce, chop parsley, cut cucumber into slightly rough pieces. Slice the onion into strips and finely chop the garlic.
- Heat the oil to a small frying pan and fry the onion until soft. Add the turmeric and minced garlic and caramelize on a low heat. Place to a bowl and set aside.
- In the same pan, fry the rest of the spices, nuts and pine nuts on a low heat for approx. 1 min.
- In a bowl, mix lettuce, cucumber, dried dill, thyme, chopped parsley, salt, yogurt and caramelized onion well together.
- Place the salad on a serving plate. Spread the roasted nut mixture all over the salad and sprinkle with pomegranate seeds and enjoy with a clear conscience.
