
Ingredients
- 150 g corn
- 1 clove garlic
- ¼ x red onion
- 2 tbsp fresh coriander
- 1 x eggs
- 1 dl plain white flour
- ½ tsp red pepper spice
- ¼ tsp chili spice
- ½ tsp salt
- ½ tsp baking powder
- 1 tbsp butter
Method
- This recipe is perfect if you've opened a can of corn and you need to use it up before it goes bad.
- Cut the garlic, the red onion and the coriander.
- Whisk the egg in a bowl and fold in the flour. Add paprika, chili powder, salt and baking powder.
- Add the corn, garlic, red onion and coriander to the batter.
- Melt the butter in a pan, and fry the batter in small pancake-shapes on both sides, until they turn golden brown.
- Serve the corn fritters as is, or over a salad or with a dip on the side. It's up to you.
