
These are so easy to make and they quickly disappear from the dinner table. With homemade salsa, it tastes heavenly. You can eat any leftovers for lunch the next day. PS: If you follow the weekly menu this dish is part of, you should set aside half of the salsa. You will use it for several dinners.
Ingredients
- 100 g pork mince
- 140 g chickpeas
- 2 tbsp taco spice mix
- 1 dl water
- 300 g plum tomato
- ½ x red onion
- 1 handful parsley
- ½ tsp sriracha
- 1 x lime
- 4 x small tortillas
- 100 g grated cheese
- 1 x avocado
- 1 clove garlic
- 1 handful lettuce
- 1 dl corn
Method
- Fry pork in a pan. Rinse the chickpeas and put it in the pan together with the taco seasoning and water.
- Make homemade salsa to a food processor. Add plum tomatoes, chopped red onion, parsley, sriracha, lime juice of half the lime and season to taste with salt and pepper.
- In a tortilla wrap, add a tablespoon of salsa, grated cheese and meat with chickpeas. Fold and press it together. Fry on both sides over medium heat in a dry pan until golden and the cheese inside has melted.
- Make a quick guacamole of avocado, finely chopped garlic, the rest of the lime juice and a pinch of salt and pepper.
- Serve quesadillas with salsa, guacamole, salad and corn.
