- 1 tbsp mayo
- 2 x nori
- ¼ x mango
- 1 tbsp water
- 1 tbsp mayo
- 1 tsp sugar

- Slice mango, cucumber and spring onion.
- Cover the sushi mat with plastic wrap.
- Make chili mayo by mixing mayo and sriracha.
- Place the nori on the mat, and press the rice down onto the nori in a thin, covering layer. You can either use two tablespoons, or clean fingers. Dip your fingers in water and place the rice.
- Add mango, cucumber, spring onion and chilli mayo.
- Make the maki using the sushi mat. Cut into 8 equal parts, and repeat until you have used up the ingredients.
- Place the maki on a plate and cover with mango sauce. Serve with soy sauce, pickled ginger and wasabi.
- If there are any leftovers, you can keep them in the fridge for lunch the next day.
